Game Day Nachos

Back in our “younger days,” Dan and I would head to a nearby sports bar to watch important games. With the Carolina Panthers playing for a spot in the Super Bowl last night, it would have been the perfect opportunity to do so, except that we aren’t drinking. Oh, and we have a 13 month old who needed to go to bed at the end of the first quarter. To make it feel like the real enchilada, we decided to make one of my favorite game day bar foods: nachos! These were far tastier, healthier and cheaper than any nachos I’ve had bar side, so it’s a win all around. They were really easy too! Ready?

Ingredients:

  • Chips (we used a sugar free sweet potato chip that worked REALLY well)
  • 1/4 lb of ground beef
  • 1 taco seasoning packet
  • Shredded cheese
  • 1 small can of sliced green olives
  • 1 small can of sliced black olives
  • 1/4 cup red onion
  • 3 roma tomatoes
  • 1 avocado
  • sour cream
  • 1 can black beans
  • 1 can corn

Instructions: 

Preheat the oven to 350 degrees

Saute the ground beef, cooking thoroughly and mixing in the taco seasoning. Once cooked, drain.

On a large platter, spread chips and sprinkle on some shredded cheese. Mix the chips and cheese, so when you warm the nachos, the cheese gets down to the bottom layer.

Sprinkle on onion, olives, tomato, beans, corn and ground beef.

Sprinkle on more cheese.

Bake for 10mins or until cheese is melted.

Add avocado and sour cream on top.

Even Ella got in on the action. Don’t worry, we also gave her plenty of vegetables to go with her nacho plate.
